Laetitia
This sparkling wine is made using Trebbiano Spoletino grapes,
which are hand picked during the first few days of October. The
must is fermented with natural yeasts for several days in open vats
without any temperature control. The resulting wine is refined
through racking and oxygenation a number of times over the
subsequent months. It is then bottled without filtering it or adding
any sulphites. Once it has been bottled the yeasts and sugars complete their fermentation process, producing the wine’s signature bubbles.
To guarantee the best possible results from the re-fermentation, the whole wine making process, from harvest to bottling, is done
respecting the phases of the moon.

Soil
Clayey-loamy, with skeleton and the right amount of organic substance, good nitrogen-carbon ratio. Calcareous soil with high active limestone which makes it ideal for the quality of wines.
Cultivation of the vineyard
The vineyards are cultivated with biodynamic techniques, only copper, sulfur and biodynamic defense preparations. Processes aimed at increasing humus through green manure and biodynamic preparations for the soil. No synthetic chemicals are used.
Harvest
End of August first half of September.
Vinification
The hand-harvested grapes are fermented in open vats with spontaneous yeasts without temperature control. Soft pressing with a horizontal membrane press, only the free-run must is used. Remains on the fine lees for 3 months. The wine thus obtained is cleaned with decanting and oxygenation. Bottled without filtration or addition of sulphur.

Pale straw yellow with greenish reflections. The aromas are fine. In the mouth the wine is savory, with a significant acidity that gives freshness and a pleasant mineral note. Overall the wine denotes elegance and balance
