This white wine is made using hand picked Grechetto and Trebbiano Spoletino grapes, harvested separately in September and October respectively. The must ferments with the skins and natural yeasts in open vats for two days before being separated from the skins. The two parts are then left to ferment separately in the open air, without any type of temperature control. The resulting wine is then returned to the fine lees and left to age in steel tanks for several months. It is then purified through racking and oxygena-tion. It ts not filtered and no sulphites are added. The wine is bottled with the waning moon in April. Wine Type: White Wine Denomination: Trebbiano i.g.t Umbria Grape Variety: Trebbiano Spoletino 85% - Grechetto 15%

The resulting wine is refined through racking and oxygenation a number of times over the subsequent months. It is then bottled without filtering it or adding any sulphites. Once it has been bottled the yeasts and sugars complete their fermentation process, producing the wine’s signature bubbles. To guarantee the best possible results from the re-fermentation, the whole wine making process, from harvest to bottling, is done respecting the phases of the moon. Maceratum

Maceratum white wine is made using a single grape variety: Trebbiano Spoletino. The grapes are picked by hand in mid-October from a vineyard cultivated using Guyot trellises. The must ferments spontaneously together with the skins using natural yeasts, no sulphites are added and the temperature is not controlled. Throughout fermentation the must and skins are mixed manually three times a day. When the fermentation is complete the wine is pressed and kept on the lees for three months evolving and becoming Jiner and clearer through racking and oxygenation. The wine is bottled with the waning moon in February, it is not filtered and no sulphites have been added.
