Decius
Decius is a red dessert wine with 100% Sagrantino grapes. The grapes are picked by hand during the second half of October and are then left to raisin on wooden racks for two to three months. The must is fermented spontaneously with natural yeasts in open vats, without any temperature control and no sulphites are added. During the fermentation the must and skins are mixed manually several times a day. The wine is aged in large oak casks from Slavonia for at least four years, during which it is racked and naturally becomes progressively finer and clearer.
We only use large casks made of seasoned wood so that the wine evolves while aging but maintains its distinctive nature. It is bottled without being filtered and no sulphites are added.
