Biancofongoli
This white wine is made using hand picked Grechetto and Trebbiano Spoletino grapes, harvested separately in September and October respectively. The must ferments with the skins and natural yeasts in open vats for two days before being separated from the skins. The two parts are then left to ferment separately in the open air, without any type of temperature control. The resulting wine is then returned to the fine lees and left to age in steel tanks for several months. It is then purified through racking and oxygena-tion. It ts not filtered and no sulphites are added. The wine is bottled with the waning moon in April.

Soil
Clayey-loamy, with skeleton and the right amount of organic substance, good nitrogen-carbon ratio. Calcareous soil with high active limestone which makes it ideal for the quality of wines.
Cultivation of the vineyard
The vineyards are cultivated with biodynamic techniques, only copper, sulfur and biodynamic defense preparations. Processes aimed at increasing humus through green manure and biodynamic preparations for the soil. No synthetic chemicals are used.
Harvest
End of August first half of September.
Vinification
The hand-harvested grapes ferment with spontaneous yeasts in open vats with a maceration on the skins for 48 hours and then in white, without temperature control. Soft pressing with horizontal membrane press. Permanence on the fine lees and decantation with decanting and oxygenation. The wine thus obtained is bottled without filtration or the addition of sulphur.

Tasting
Straw yellow colour. Fine and delicate aroma, with fruity and floral notes. Flavor and great freshness on the palate.
