Fracanton
Fracanton is a red wine made with 100% Sagrantino grapes. The grapes are picked up by hand during the second half of October, from a wineyard planted more than 40 years ago and cultivated using the trad suitional linear trellising system. The must is fermented spontaneously using natural yeasts in open amphorae. The temperature is not controlled and no sulphites are added. During the fermentation the must an skins are mixed manually several times a day. The must is kept in contact with the skins after fermentation for up to the three months. The wine is aged in large oak casks from Slavonia for at least three years during which it is racked and naturally becomes progressively finer and clearer. We only use large casks made of seasoned wood so that the wine evolves while aging but maintains its distinctive character. It is bottled without being filtered or the use of any additional sulphites.

Clay/silt, whit a good skeletal structure, high in organic substance, and a good nitrogen-carbon ratio. Higher in active limestone, which makes it ideal for the quality of the wines.
Cultivation of the vineyard
The vines are cultivated using biodynamic techniques. Only copper, sulphur and biodynamic preparations are used as defence against disease. We work to increase the humus through green manure and biodynamic soil preparations. No synthetic chemical products are used.
Harvest
Late harvest, at the end of October. Harvesting by hand with bunch selection of our oldest Sagrantino vines, with Palmetta training system.
Vinification
Prolonged fermentation with indigenous yeasts in open terracotta jars with daily manual punch down of the cap, and post-fermentation maceration for 3 months, soft pressing with a horizontal membrane press.
Ageing
Minimum 4 years in old Slavonian oak casks, with racking and oxygenation during the first few months. The wine is then bottled without filtration or addition of sulphur dioxide.
Bottle ageing
12 months. Marketed in 75cl, 1.5Lt, and 3Lt bottles.
Ageing potential
It has a practically unlimited capacity for ageing and can be stored for over 20 years.
Tasting
A dark garnet colour, this wine expresses an olfactory profile of rare elegance and nobility. Strong and majestic on the palate; warm, soft and full-bodied in structure. The tannins are very fine and the finish is of exemplary length.
Serving temperature
18° – 20°C. Uncork at least two hours before serving.
Pairing suggestions
This wine should be enjoyed with game, noble poultry, roast kid or lamb.
